Project Details:
The work consisted of construction of New Central Kitchen building, consisting of state of the art food preparation equipment and built in walk-in coolers & freezers. Building consists primarily of exposed Masonry walls with structural steel, metal stud framing, and a variety of exterior finishes including window curtain walls, storefronts, metal paneling system, wood paneling system, and plaster. Building total square footage is 27,232 SF with approx. 18,200 square feet of the building dedicated to food preparation areas, including 4,600 SF of walk-in & drive-in coolers & freezers, remainder of the building is office space for working staff. Food service items include a Cook/Chill system, 100 gallon kettles, ovens, steamers, mixers, fryers, dedicated hot prep and cold prep rooms, separate wash room with cart, dish and pot wash stations, multiple exhaust hoods with fire protection systems. Project also included the remodel of six existing satellite kitchens throughout the Hospital campus in order to support new food transportation/ distribution system that will integrate all satellite kitchens with the new Central Kitchen Building. This project has been certified LEED® Gold. DJM provided all documentation required in order for the state of CA to obtain LEED® gold certification from the U.S. Green Building Council (USGBC). This projects jurisdiction extended to both the State of California’s Department of General Services (DGS), Division of the State Architect (DSA), and OSHPD.
